Recipe 5: San Bei Ji this Chinese New Year!

It’s been 2 years since we have been married and this was the first time I tried to make Taiwanese food. Not because I didn’t want to but because I wasn’t sure where to begin. Earlier last year I decided to buy this cook book by @tiffy.cooks and when I opened it this week, I was super happy to see ways Taiwanese recipes. As it is Chinese / Lunar New Year, so I decided to surprise my husband. I tried 3 recipes for dinner and this one was his absolute favorite. So here goes. Try it out. Or better still buy the book.
Recipe: 3 Cup Chicken (reworded from Tiffy Cooks - not mine!)
Serves - 2 people
Time: 30mins including prep
All You Need Is:
250 gms Chicken drumsticks or wings - I couldn’t find either so I got the thigh and chopped 2 thighs for 4 pieces.
3 cups:
1/2 cup Black vinegar
1/2 cup Sesame oil
1/2 cup Light Soy Sauce
3 Tbsp Sugar
Others:
Chopped red chillies
Sliced ginger - long
Sliced garlic - 6 pods
Thai basil
How To Make:
Step 1: Boil water. Once it boils add the chicken and let it remain for 2-3 minutes. This removes any impurities.
Remove chicken, run under cold water and pat dry.
Step 2: In a deep pan, add olive oil, ginger, chillies and garlic. Add in chicken and let fry on each side for 3 minutes
Step 3: Add in the “3 cups” and the sugar. Cook until the liquid thickens. It took me 10mins but depends upon how much liquid you added. I was a bit off with my measurements.
Step 4: Once the liquid is thick and sticking to the chicken, add in the Thai basil and sauté for not too long - 1 min should do.
Et voila…. 3 Cups Chicken or San Bei Ji (I think I pronounced it totally wrong on the video… my apologies for that. I can pronounce it better now coz my husband taught me last evening the exact way to say it! )
