Recipe 4: A 3 way Moringa! ;)

MORINGAAAA!!!

Moringa or Mungakai leaves or as the French call it Le Moringa...so many names and so many more benefits!


This incredible leaf that now the whole world has fallen in love with has been a part of Indian, mainly South Indian food culture for generations. Moringa has multiple benefits - aside from being a very delicious addition to the plate, helps in skin & hair care, healing wounds faster, preventing and treating cancer, treating stomach upsets, etc. It is rich in vitamins and minerals such as Vit A, Vit B1, 2 & 3, Vitc C, Calcium, Pottasium, Magnesium. Moringa also contains a range of antioxidants and anti-inflammatory agents that also help protect heart health. So it is but natural to make this magic leaf an important part of our eating habits - but do it with fresh or dried moringa.


Here are 3 simple recipes, I make with Moringa at home, that are also relished by my Taiwanese husband ;)


Serves - 2 people over 2 meals


Recipe 1: Moringa Dal


Toor Dal - 1 cup

Tomato - 1 chopped

Tomato puree - 2 Tbsp

Ginger Garlic paste - 1 Tbsp

Salt, Turmeric, Red Chilli powder

Priya Ginger pickle - 1 Tsp


Soak Toor Dal. Wash and add to a pressure cooker with water to cover the dal (or to a deep sauce pan). Add Tomato puree and also 1 cut tomato. Add Ginger Garlic paste, red chilli powder, turmeric. Cook for up to 3 whistles (in sauce pan cook until the dal is soft and mashes). Add Moringa leaves, Priya ginger pickle. Top it off with ghee!


Recipe 2: Moringa Aloo Fry


Potato - 1 large

Fenugreek seeds - 1/2 Tsp

Cumin seeds - 1/2 Tsp

Green chillies - 2 to 3


Heat oil in a skillet and fry the fenugreek and cumin seeds. Add green chillies. Once the chillies start to sputter, add the diced potato. Cook until its almost done and add the moringa leaves.


Recipe 3: Moringa Pachadi


Chana dal (Bengal gram) - 1 Tsp

Urad dal - 1/2 tsp

Dried red chilli - 1 large

Red onion powder - 1/2 tsp

Ginger powder - 1/2 tsp

Garlic powder - 1/2 tsp

Lemon juice

Salt


Fry all the above ingredients together. Add moringa leaves. Once cooked grind it into a paste. Add lemon juice and salt for added flavor. Done!
